Pie shells and the stuffing inside
Due to the lock down activity here in KL, i have decided to improve my baking and cooking skills. Well, i started cooking when i moved to the States in 2005 but i was never really into it until recently. Since i changed my job and able to attend my family more, i realised that they actually eat much more when i cook! My 9 year old boy started asking me to teach him how to make pancakes and my 12 year old daughter started making scrambled eggs and omelet! Oh my, such huge impact not only on me, but no the children too.
About the pie..
Well, i have been trying to make some pies but always, something will go wrong - especially the crust. I searched many recipes for pie crust but somehow it never turn out the way i liked it. Either it's me or the recipe, im not sure. So, yesterday i tried to make the hot water pie crust and i've made a mistake! And somehow it turned out to be just fine! The way i liked it! And it taste good! 😁
Here's the recipe for a mistakenly mixed dough:
Ingredients:
3 1/2 (450g) cups flour
1/2 tsp salt
1 tbsp confectioner's sugar
1 egg white, beaten (leave the egg yolk for glazing)
3/4 cup hot water
1/2 cup (160g) butter (i use butter to substitute lard)

Here's the recipe for a mistakenly mixed dough:
Ingredients:
3 1/2 (450g) cups flour
1/2 tsp salt
1 tbsp confectioner's sugar
1 egg white, beaten (leave the egg yolk for glazing)
3/4 cup hot water
1/2 cup (160g) butter (i use butter to substitute lard)
Method:
- Mix half the flour (1.5 cups)with butter. Mix it until it crumbles (This is where i got absolutely wrong from the actual method). Then add the rest of the flour (another 1.5 cups), salt, sugar and the beaten egg white.
- Put in the hot water and mix the dough with a spatula. Remember, the dough is really hot.
- The dough is quite soft at this point of time. Slowly add the remaining flour until you reach the consistency of your liking. I leave 2 spoonful of flour for dusting when rolling the pie crust.
- Using a muffin tray, mold your crust. Here you may bake the inside part of the crust first at 190C for about 8-10 mins. I like to do this step to avoid the inside shell from becoming too soft.
- Add in the filling and close it with a top. I make a hole in the middle, on top of the pie crust to avoid spilling, especially when you have a wet filling. (I learned this in a recipe online).
- Wash the top crust with the egg yolk.
- Bake it at 190C for 30-40 mins (my mom like to use lower heat but longer cooking time - i'm not sure why).
As for the filling, i have some leftover roast chicken and asked my husband to shred it. So nice of him. I used the shred chicken, mix it with some peas, leak and mushrooms and cooked it with milk for the filling.
Filling ingredients:
- 1 bowl of shredded chicken
- 1/2 cup leek (cut into small pieces)
- 1/2 cup peas
- 1/4 cup mushrooms
- 1 cup milk
- 2 tbsp vegetable oil (i like to use canola oil)
- 1 medium size yellow onions (slice thinly)
- 2 garlic (cut into small pieces)
- 1 cube chicken broth
- 1 tsp dried oregano
- Season with salt and pepper
Method:
- Saute the onion and garlic with vegetable oil until soft
- Put in the leek, peas and mushroom and saute until soft
- Add the shredded chicken and saute until slightly brown
- Then, add milk and chicken broth and let it cook until everything get soft. If you think the mixture is too dry, add 1/4 cup of water.
- Season with oregano, salt and pepper.
- Let it cool before inserting it inside the pie crust.
