Fluffy Pancakes

I woke up this morning with such a lovely surprise!

As i walked downstairs towards the kitchen, i smell something good. Someone is cooking? There, i saw one of my boys were making pancakes! Ha ha..what a pleasant surprise. Well, Hasan loves my pancakes so much. Almost every week, pancakes must be one of his lunch box menu. So, i finally taught him how to make them and with careful supervision by the sister, he can make it himself. My only worry is him handling the stove.

Carefully, he wrote down the menu and paste it on the fridge. Since then, cousins and aunties who came for dinner at our house has been taking pictures of the recipe. Their remark was always "The best recipe ever. Fluffy and tasty". Well, i'm glad.


So, here's the recipe that i would love to share. There are a few steps that you have to follow for you to get a nice fluffy pancake.

Ingredients:

1 1/2 - 2 cups self rising flour
1/4 cups sugar (you may add more if you want sweeter pancakes)
1/2 tsp salt
2 tbsp oil
1 cup milk (can be cold or at room temperature)
1 egg

Method: 

  1. Mix the wet ingredients together and whisk gently. 
  2. Add all the dry ingredients to the wet ingredients. Do not whisk. Stir it gently with a spatula until both ingredients are mixed. The batter should not be smooth. You may see some lumps of flour that was not mixed. Leave it as is. 
  3. Put it in the fridge for about 30 mins until you see some bubble holes in the batter.  
  4. Take it out and stir it gently, not to mix it until smooth. If the batter is too think, add 1 tbsp of milk at a time. The batter must be slightly sticky and dense. Smooth batter will result in a wider and thinner pancake. 
  5. Cook it in a non stick pan. I did not use any butter or oil to cook the pancake.
