Brazilian Spinach
One of me and my husband's favourite past time is gardening. It gives us a pleasure to see greeneries at our yard and seeing it grow just gives us a sense of satisfaction. If it grows well, without having much problems, it's a milestone achieved! Both of us don't really grow flowers, so our small garden are filled with edible plants like Brazilian spinach, bay leaves, water leaves, bell peppers, jalapeneos, mint and the list goes on.
The feeling to pluck home grown vegetables is just satisfying. We grow alot of Brazilian spinach and use it in our cooking. It is good in chicken soup, soy sauce dishes or just butter fry it wth mozzarella!
Beef in Soy Sauce
Beef (cut into small pieces)
1 large size onion
2 cloves garlic
1/2 inch ginger
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp chilli powder (optional)
3 tbsp dark soy sauce
2 tbsp sweet soy sauce
1/2 cup or 1 cube beef broth
1 cup Brazilian spinach
1/2 cup chopped sweet peppers or red bell peppers
1 large red tomatoes
Salt and pepper
Water
Method:
- Cut the onion into thin slices. Crush the garlic and ginger. Stir fry the onions, garlic and ginger together until it turn light brown.
- Add ground coriander, cumin and chilli powder into the pan and add 1/4 cup of water to cook the paste. Cook for about 5 minutes, until you can smell the fragrant of the spices.
- Add the dark and sweet soy sauce as well as the broth. Here you may add another 1/2 cup of water or slightly more to make the dish a little watery. If you like it dry, you don't have to add water. Cook until the sauce is well cooked for about 5-7 minutes.
- Add sweet peppers, and red tomatoes. Cook for 2-3 minutes.
- Last, add the Brazilian spinach. Cook for another 2-3 minutes. I like it half cooked.
- Season with salt and pepper.
